Truffle Mixture
- 1/3 cup Bailey’s Irish Cream
- 1 lb dark chocolate (or semi-sweet chocolate, finely chopped)
- 1/3 cup heavy cream
- 2 tablespoons butter
- 1/2 teaspoon sea salt
Coating
- 1 cup unsweetened cocoa powder (for rolling the truffles)
- Combine Ingredients: In a microwave-safe large bowl, add the finely chopped chocolate, heavy cream, and butter.
- Microwave: Heat the mixture in 30-second intervals, stirring thoroughly between each interval until the chocolate is completely melted and the mixture is smooth.
- Add Bailey’s and Salt: Stir in the Bailey’s Irish Cream and sea salt until fully combined.
- Chill Mixture: Cover and chill the mixture in the refrigerator for 2 to 3 hours until firm enough to scoop.
- Scoop and Shape: Remove the mixture from the fridge and use a small ice-cream scoop to portion out even amounts. Quickly shape each portion into a ball by rolling it between your palms.
- Roll in Cocoa Powder: Roll each truffle ball in the unsweetened cocoa powder until fully coated and place them into small cupcake liners.
- Repeat: Continue scooping, shaping, and rolling the remaining mixture until all truffles are formed.
- Serve and Store: For best flavor and texture, keep the truffles refrigerated in an airtight container and serve chilled.
