Ingredients

Scale

Muffin Batter

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup apple butter
  • 2 large eggs
  • 1/2 cup unsalted butter, melted
  • 1 teaspoon ground cinnamon
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Streusel Topping

  • 1/3 cup all-purpose flour
  • 1/3 cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 1/4 cup unsalted butter, cold and cubed

Instructions

  1. Prepare the Streusel: In a small bowl, combine flour, sugar, and cinnamon. Cut in the cold cubed butter using a pastry cutter or fork until the mixture resembles coarse crumbs. Set aside in the refrigerator.
  2. Mix the Muffin Batter: Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners. In a large bowl, whisk together the flour, sugar, cinnamon, baking powder, baking soda, and salt. In another bowl, beat the eggs, then add melted butter and apple butter, mixing until smooth. Gradually combine the wet ingredients with the dry ingredients until just mixed; do not overmix.
  3. Fill Muffin Cups: Spoon the batter evenly into the prepared muffin tin, filling each cup about two-thirds full.
  4. Add Streusel Topping: Generously sprinkle the streusel mixture over each muffin cup, covering the batter tops.
  5. Bake the Muffins: Place the muffins in the preheated oven and bake for 20-25 minutes, or until the tops turn golden brown and a toothpick inserted into the center comes out clean.
  6. Cool and Serve: Remove muffins from the oven and allow them to cool in the pan for 5 minutes before transferring to a wire rack to cool completely. Serve warm or at room temperature.

Notes

  • Use unsweetened apple butter for a less sweet muffin.
  • Do not overmix the batter to keep muffins tender.
  • For extra texture, add chopped nuts or diced apples to the batter.
  • Muffins can be stored in an airtight container at room temperature for up to 3 days.
  • Reheat muffins in the microwave for 15 seconds to enjoy warm.
