Ingredients

Scale

Chicken:

  • 2 (8-ounce/225g) boneless skinless chicken breasts
  • 1½ teaspoons olive oil
  • ½ teaspoon salt
  • ½ teaspoon garlic powder
  • ½ teaspoon paprika
  • ¼ teaspoon ground black pepper

Filling:

  • 2 ounces cream cheese (softened, 56g)
  • ¾ cup fresh spinach (finely chopped, 24g)
  • 3 tablespoons grated parmesan cheese
  • 2 tablespoons diced tomato
  • 2 cloves garlic (minced)
  • ¼ teaspoon ground black pepper
  • ⅛ teaspoon salt

Instructions

  1. Prepare the filling: In a small bowl, combine the softened cream cheese, finely chopped fresh spinach, grated parmesan, diced tomato, minced garlic, ground black pepper, and salt. Mix thoroughly until well blended to create the filling.
  2. Prepare the chicken breasts: Place each chicken breast on a cutting board. Using a sharp knife, carefully cut a pocket into the thickest long side of each breast, forming a cavity for the filling.
  3. Stuff the chicken breasts: Spoon the prepared filling evenly into each chicken breast pocket. Secure the openings with toothpicks to keep the filling inside during cooking.
  4. Season the chicken: Rub the outside of each stuffed chicken breast with olive oil. Sprinkle evenly with salt, garlic powder, paprika, and ground black pepper for a flavorful crust.
  5. Preheat the air fryer: Set the air fryer to 375°F (190°C) and allow it to preheat for a few minutes to ensure optimal cooking.
  6. Cook the chicken: Place the stuffed chicken breasts in the air fryer basket, ensuring they do not touch for even cooking. Air fry for 15 to 17 minutes, or until the internal temperature in the thickest part reaches 165°F (74°C).
  7. Rest and serve: Remove the chicken breasts from the air fryer and let them rest for 3 minutes. Carefully remove the toothpicks before serving to enjoy the perfectly cooked stuffing and juicy chicken.

Notes

  • Make sure not to overfill the chicken breasts to avoid the filling spilling out during cooking.
  • Use a meat thermometer to ensure the chicken reaches a safe internal temperature of 165°F (74°C).
  • Letting the chicken rest after cooking helps retain its juices and enhances flavor.
  • Variations: You can substitute spinach with kale or add mushrooms to the filling for extra flavor.
  • To keep the chicken breasts intact, secure the pocket openings tightly with toothpicks or kitchen twine.
